Yam is a starchy edible root vegetable that is very similar to sweet potato in its appearance. It is called Suran in Indian and is widely used to make curries and sabzi. Curries hold an important part of our diet and are usually made for lunch. This main course dish is the perfect way to jazz up your boring lunch menu. Ingredients of Suran Curry
500 gm yam
1 cup grated coconut
1/2 teaspoon turmeric
1 tablespoon tamarind paste
1/2 tablespoon red chilli powder
2 tablespoon vegetable oil
2 tablespoon coriander leaves
1 teaspoon mustard seeds
1 tablespoon powdered jaggery
1/4 tablespoon garam masala powder
salt as required
1 stalk curry leaves
How to make Suran Curry
Step 1 Saute the suran Cut the suran or yam into cubes and toss it in a heated pan with 1 tbsp oil. Saute the yam pieces for a few minutes. Once done, take them out in a bowl.
Step 2 Prepare the masala In the same pan, add 1 tbsp oil more and let it heat. Add mustard seeds, curry leaves, grated coconut and saute for a few minutes. Now add turmeric, red chilli powder, tamarind paste and jaggery. Adjust the salt as per your taste and add 1 cup water. Add the suran cubes and bring to a boil and them simmer for a few minutes. Now add garam masala and mix well. Let it simmer until the dish attains a slightly thicker consistency.
Step 3 Garnish and serve Garnish the Suran Curry with chopped coriander leaves and serve. Pair up with chapati or rice and serve.
